The Boston Cooking-School Cook Book written by Fannie Farmer and published in 1896 was the first cookbook to use standardized measurements. You can see full-page scans of the cookbook here.
The Minimalist, Mark Bittman, has an article about cleaning out your pantry for the new year. I have to say I'm interested and slight skeptical about simmering a couple of veggies for a few minutes will be just as good, if not better than canned stock.
